Spinach Ricotta Rotini
This is a delicious one-pot pasta recipe which spinach, ricotta cheese, and ham. To make this a vegetarian meal, just replace ham with 1 can of chickpeas. This recipe yields 4 servings.
Ingredients:
- 1 tub (454g) ricotta cheese
- 4 cups rotini pasta
- 1 package frozen chopped spinach, thawed and squeezed dry
- 1 cup shredded asiago cheese
- 1 cup fresh bread crumbs
- 1 can 2% evaporated milk
- 2 cup smoked ham, chopped
- 2 1/2 cups water
- 1 1/2 teaspoon dry Italian herb seasoning
- 1 teaspoon dijon mustard
Directions:
- Preheat oven to 425F/220C.
- In a bowl, mix together ricotta cheese, evaporated milk, water, herb seasoning and mustard. Stir in spinach, pasta, and ham.
- Pour mix into 13″x9″ baking dish and bake in oven for about 30 minutes, stirring twice.
- Combine asiago cheese with bread crumbs and sprinkle over pasta dish.
- Bake for an additional 5 minutes or until golden.
