Spinach Ricotta Rotini

This is a delicious one-pot pasta recipe which spinach, ricotta cheese, and ham. To make this a vegetarian meal, just replace ham with 1 can of chickpeas. This recipe yields 4 servings.

Ingredients:

  • 1 tub (454g) ricotta cheese
  • 4 cups rotini pasta
  • 1 package frozen chopped spinach, thawed and squeezed dry
  • 1 cup shredded asiago cheese
  • 1 cup fresh bread crumbs
  • 1 can 2% evaporated milk
  • 2 cup smoked ham, chopped
  • 2 1/2 cups water
  • 1 1/2 teaspoon dry Italian herb seasoning
  • 1 teaspoon dijon mustard

Directions:

  1. Preheat oven to 425F/220C.
  2. In a bowl, mix together ricotta cheese, evaporated milk, water, herb seasoning and mustard. Stir in spinach, pasta, and ham.
  3. Pour mix into 13″x9″ baking dish and bake in oven for about 30 minutes, stirring twice.
  4. Combine asiago cheese with bread crumbs and sprinkle over pasta dish.
  5. Bake for an additional 5 minutes or until golden.
