Ricotta Gnocchi Recipe
This is a delicious ricotta gnocchi recipe that’s easy to make and will please everyone in your family.
Ingredients:
- 1.5 pounds ricotta cheese, drained
- 2 eggs
- 3 1/4 cups flour
- 1/2 cup freshly grated Parmigiano-Reggiano cheese
- 4 cups Marinara sauce
- 1 teaspoon olive oil
- salt and pepper to taste
Directions:
- In a large bowl, add 3 cups of flour and beaten eggs. Add ricotta cheese, Parmigiano-Reggiano cheese, and sprinkle with salt and pepper.
- Mix ingredients well to form dough.
- On a floured surface, knead the dough for an additional 2-3 minutes, adding the rest of the flour if needed.
- Divide dough into 4 pieces and roll into balls.
- Roll out each ball of dough into a log shape, about the width of your index finger. Cut each log into 1/2 inch pieces.
- Preheat oven to 350F/175C.
- In a large pot, bring water to a boil and add olive oil and gnocchi dough.
- Cook on high, uncovered, until the gnocchi rise to the surface, about 2-3 minutes.
- Heat Marinara sauce in a pan over medium heat.
- Toss gnocchi in Marinara sauce and pour into casserole dish. Sprinkle with a little bit of Parmigiano-Reggiano cheese.
- Bake in oven for 10 minutes.
