Ricotta Gnocchi Recipe

This is a delicious ricotta gnocchi recipe that’s easy to make and will please everyone in your family.

Ingredients:

  • 1.5 pounds ricotta cheese, drained
  • 2 eggs
  • 3 1/4 cups flour
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese
  • 4 cups Marinara sauce
  • 1 teaspoon olive oil
  • salt and pepper to taste

Directions:

  1. In a large bowl, add 3 cups of flour and beaten eggs. Add ricotta cheese, Parmigiano-Reggiano cheese, and sprinkle with salt and pepper.
  2. Mix ingredients well to form dough.
  3. On a floured surface, knead the dough for an additional 2-3 minutes, adding the rest of the flour if needed.
  4. Divide dough into 4 pieces and roll into balls.
  5. Roll out each ball of dough into a log shape, about the width of your index finger. Cut each log into 1/2 inch pieces.
  6. Preheat oven to 350F/175C.
  7. In a large pot, bring water to a boil and add olive oil and gnocchi dough.
  8. Cook on high, uncovered, until the gnocchi rise to the surface, about 2-3 minutes.
  9. Heat Marinara sauce in a pan over medium heat.
  10. Toss gnocchi in Marinara sauce and pour into casserole dish. Sprinkle with a little bit of Parmigiano-Reggiano cheese.
  11. Bake in oven for 10 minutes.
