Quick Pasta Primavera Recipe

This quick and easy to make pasta primavera recipe is delicious and will please the whole family!

Ingredients:

  • 1 pound pasta (penne or rigatoni)
  • 1/4 cup each of an assortment of vegetables – mushrooms, peppers, onions, beans, zucchini
  • 3 cloves garlic, crushed
  • 1/4 cup mixed fresh herbs, chopped (basil, chives, parsley)
  • 1/4 cup olive oil
  • 1/4 cup Parmesan cheese
  • salt and pepper to taste

Directions:

  1. In a large pot, bring salted water to a boil and add pasta. Cook until tender.
  2. In a large frying pan, warm olive oil over high or medium heat. Add onions and garlic until softened.
  3. Next, add mushrooms and any other vegetables that need more time cooking.
  4. Add peppers, zucchini, and any other vegetables you’ve decided to add. Cook for a few minutes.
  5. Strain pasta and add vegetable mixture to the cooked pasta, mixing well.
  6. Season with salt and pepper and add fresh herbs and Parmesan cheese.

  1. I have seen few Biryani preparation were they fill it with cheese and every time I attempt that the Biryanis, the covering breaks up. Let me check how it works using your recipe.
