Quick Pasta Primavera Recipe
This quick and easy to make pasta primavera recipe is delicious and will please the whole family!
Ingredients:
- 1 pound pasta (penne or rigatoni)
- 1/4 cup each of an assortment of vegetables – mushrooms, peppers, onions, beans, zucchini
- 3 cloves garlic, crushed
- 1/4 cup mixed fresh herbs, chopped (basil, chives, parsley)
- 1/4 cup olive oil
- 1/4 cup Parmesan cheese
- salt and pepper to taste
Directions:
- In a large pot, bring salted water to a boil and add pasta. Cook until tender.
- In a large frying pan, warm olive oil over high or medium heat. Add onions and garlic until softened.
- Next, add mushrooms and any other vegetables that need more time cooking.
- Add peppers, zucchini, and any other vegetables you’ve decided to add. Cook for a few minutes.
- Strain pasta and add vegetable mixture to the cooked pasta, mixing well.
- Season with salt and pepper and add fresh herbs and Parmesan cheese.
