Italian Pasta Salad
Since summer is fast approaching, an Italian pasta salad is the perfect lunch meal. It’s quick, easy, and super refreshing.
Ingredients:
- 1 pound pasta, any shape
- 1 cup cherry tomatoes, cut in half
- 1 sweet red pepper
- 1 can artichoke hearts
- 1/2 lb black olives, cut in half
- 6 green onions
- 2 tablespoons red wine vinegar
- 2 tablespoons balsamic vinegar
- 7 tablespoons extra virgin olive oil
- juice of 1 1/2 lemons
- salt and pepper to taste
Directions:
- In a large pot, bring salted water to a boil and add pasta. Cook until al dente and drain.
- In a jar, shake together lemon juice, olive oil, balsamic vinegar, and red wine vinegar to make the dressing.
- Chop green onions and place in large bowl. Add olive. Drain artichoke hearts and cut them into quarters. Add to the bowl.
- Add thinly sliced red pepper to bowl. Add cooked, drained pasta.
- Pour dressing over and mix well. Add tomatoes and mix again.
- Finish off with a pinch of salt and pepper to taste.
