Italian Minestrone Soup

The Italian minestrone soup is one of heartiest, healthiest, and most delicious soups there is. Here is an easy Italian minestrone soup recipe that anyone can make, but every will enjoy.

Ingredients:

  • 8 cups chicken/vegetable broth
  • 1 cup chopped parsley
  • 1 zucchini, sliced
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 1 clove garlic, minced
  • 1 small can tomato paste
  • 1 28oz can diced tomatoes
  • 1 cup shredded cabbage
  • 1 cup frozen peas
  • 1 cup navy beans, soaked in water overnight
  • 1 cup uncooked macaroni (or any other small-sized pasta you wish to use)
  • A few splashes of oil
  • 4 cups water
  • Dried basil, oregano, thyme, and sage to taste
  • Salt and pepper to taste

Directions:

  1. In a large pot, heat olive oil on medium heat. Add the garlic, onion, celery, and carrot, and sprinkle with salt. Saute until onions are soft.
  2. Add the tomato paste, chopped tomatoes, broth, cabbage, zucchini, peas, beans, and water, and bring to a boil. Reduce heat and simmer for 30 minutes.
  3. Add the rest of the ingredients except for the parsley. Cook for another 10 minutes or until the pasta is tender. Add parsley just a minute before serving.
